I've been mulling over this question now for about three hours. Picking just one is never easy for me. I've read so many wonderful books over the years. If I really had to pick just one, the first place that came to mind was the fair on the other side of the wall in Wall as described in Stardust by Neil Gaiman. It was the very first Gaiman novel I ever read and one I've re-read twice. I wouldn't mind a third re-read. If I could pick a second I would want an audience with Ozma. If I couldn't have an audience with her, I wouldn't mind a chance to see the Gnome King's cave. He's grumpy but he has an awesome collection. If I could pick a third, I've love to see Majipoor. I'd like to see Lord Valentine juggle. Majipoor is a series of science fiction / fantasy books by Robert Silverberg. They start with Lord Valentine's Castle which is by far my favorite of the series.
