When living on a tight budget, cooking in bulk and cooking from scratch saves both money and time. With Ian back in school and working on his thesis, I've taken over much of the cooking. My most recent endeavor was roast beef.

Ian usually takes care of the "hunk of meat" cooking but this time it was my turn. I have to admit that I asked his advice before starting it. His instructions were: "put herbs on it, put in the oven at noon set to 200° F to cook all day." So that's what I did.

I used more of our freshly grown herbs: parsley, time and rosemary and then some garlic from our pantry. The result was a medium cooked roast beef that was tender and delicious.

Mmmmm - that looks good. Now that it's cooling off here, I'll start cooking more - versus grilling, that is.

My roast beast recipe is simple - crock pot! :) Toss the beast in, add the herbs & spices, 1/4 cup of water and slow cook all day. By the time Mark gets home, it's fork tender falling to pieces. Yum!

Now you've got me wanting to make one... Maybe by next weekend. The fall cripsness is in the air this morning. "
